I had an absolutely amazing time in Turkey! Cappadocia is unreal! I’ve traveled to more than 33 countries and yet, Cappadocia surprised me with its topography, and its stunning rock formations! It’s like nothing like I’ve ever seen! 
A few points that I noted:
Carry enough Turkish Liras. Cash is still very much king in Turkey and unless you’re staying in Goreme, Antalya or Istanbul itself, which is very touristy, you might not find enough money changers or ATMs for international cards. 
Almost nobody speaks English. So do keep an audio translate app handy on your phone. You’re going to be using it a lot!
It gets supremely hot during the day at Capoadocia, Antalya and Pamukkale. Almost unbearably hot in the afternoon! Take a break and get some rest back at the hotel or visit a pottery making class indoors. Don’t try to brave the heat and power through it. We got sick trying to do that.
The rooftop restaurants have stunning views that are just as nice and enjoyable in the evenings. And even if you’re not a guest, you can eat dinner there.
The hot air ballooon ride was expensive but worth every penny! It’s the most amazing experience! It was worth waking up at 2am for the sunrise. Don’t miss it!
